Good morning Lords and Ladies! We had quite the fantastic weekend. Did some work indoors and out, got some grocery shopping done, worked out, went for an evening walk with the whole family, cooked ahead, and more. I was able to cook a bag of dried black beans and freeze them, made six pizza doughs (froze 4 and used 2), made homemade granola, and grilled up a bag of chicken and then sliced a froze it, too. I was very productive in the kitchen and while it’s not spic and span, it doesn’t look like a hurricane hit it either. Yay! Here’s what we’re eating this week.
Monday: Baked Chicken Rotini with Zucchini and Mushroom
(making a double batch to freeze one)
Salad
Toast with Olive Oil
Tuesday: Shrimp Salad
With Romaine, Grilled Shrimp, Feta, Red & Yellow Peppers,
Mushrooms, Avocado, Eggs, & Cucumber
Oatmeal Whole Wheat Quick Bread
Wednesday: Black Bean Meatballs
Thursday: Eggs
Friday: Mediterranean Pizza /Small Cheese one for the kids
Salad
Saturday: Lunch: PBJ (or Leftovers)
Sunday: Lunch: Out! Happy Mother’s Day to Me! 🙂
