So I think this is how we’ll work Monday Meals from now on . . . I’ll fix the recipe on Monday and post it on Tuesday. Technically, it’s still a meal on Monday, right? Anyway, you might think that we eat meatballs all of the time since this is the second meatball recipe I’ve posted; not really, but we do like a good meatball around these parts. Here’s what you need for these.
Preheat oven to 375.
1 to 1 1/2 lb. of Ground Turkey (I use 93/7) or Lean Ground Beef
1 egg
1 cup of quick oats
1 to 1 1/2 cup of mashed black beans
1/2 cup of ketchup (we like Heinz Organic)
1 T of barbecue sauce (I used Dinosaur BBQ Roasted Garlic Honey found @ Walmart basically b/c it has no HFCS)
Salt and Pepper to taste
Mash your black beans. You can either use the back of a fork or since I slow cook mine and then freeze them in individual bags, I usually defrost them and simply squeeze ’em up in the bag (a great way to get the kiddos involved in the cooking!). Using your hands, or a good spoon mash together the ground turkey, egg, and oats. Add in the beans. Then finish by working the ketchup, BBQ sauce, and seasonings through the meal. Form into walnut sized meatballs (I usually line them up and make a dozen), place into a lightly sprayed 8×8 glass baking dish. Drizzle with ketchup. Bake for ~35 minutes or until cooked. You will want to drain off the water and any grease that bakes out of them before serving.
The eldest princess LOVES these and can’t get enough of them. We had them last night with green beans and quinoa (the youngest princess chowed down on those but isn’t a big meat fan yet). This is one of my new favorite recipes, my family gobbles it up and it’s pretty inexpensive to make. I subbed italian bread crumbs for the quick oats out of necessity and it was fab

I am planning on making these tonight but only have Old Fashioned oats (not quick oats). Will I need to put them in the food processor to grind them up a bit or use them as is?

Whoops AllieMarie! I can’t believe I just saw this. I would imagine you could do either. They’ll be less visible if they’re ground; however, if you don’t mind seeing them you should be fine. 🙂
