It’s kind of an odd week because today is the King’s birthday and this weekend we’ll be traveling for the Memorial Day holiday.  So we’ll be eating on the go more than usual.  But we’ll still try to bring it from home when at all possible.  And if we can’t do that, we’ll use a coupon!

Monday: Takeout (still TBD because the King can’t give me a straight answer on what he wants)

Tuesday: Grilled Pork Chops with grilled Apple Slices
                    Green Beans
                    Mashed Sweet Potatoes
                    Toast and Olive Oil

Wednesday: Taco Pizza (it was a hit last week)
                    Topped with Seasoned Ground Turkey
                    Black Beans
                    2% Reduced Fat Mexican Cheese
                    Salsa
                   Chopped Romaine and drizzled with Light Sour Cream

Thursday: Chicken Parmigiana
                 Penne Pasta with Marinara Sauce
                 Spinach Salad
                 Garlic Toast

Friday: (on the road) PBJ
             Fresh cut veggies
             Apples and Bananas

Saturday/Sunday/Monday:  Our Cooler will be filled with:
              A Gallon of homemade iced tea and a refillable bottle to drink it on the go
              A Gallon of water and refillable bottles to drink it on the go
              Whole Wheat Bread
              Deli Meat and Cheese
              A Jar of Peanut Butter
              A Jar of Jelly
              Cut veggies (Cucumber, Red/Yellow Pepper, Carrots, Celery)
              Apples, Bananas, Pears, Oranges
              Triscuits (we got a ton on the cheap this weekend thanks to Kraft!)
              Frosted Mini Wheats (yeah for paying $1/box!)
              Protein Bars
              Muscle Milk (the King’s favorite is Light Chocolate Milk)
              I have several B1G1 McCafe drink coupons so I’m sure there will be some coffee mixed in
              there, too.  I don’t buy McDonald’s food for several reasons but I am a sucker for their coffee!

I don’t have time to post a recipe today (SO much to do to celebrate the birthday boy!) but will post one tomorrow.  I made some slightly healthified Red Onion Rings over the weekend (I know, oxymoron) and I want to pass that recipe along to you.  They were yum-o and perfect with our Inside out Turkey Cheeseburgers.  For now, look through some of my favorite Monday Meals Recipes of the past like Black Bean Turkey Meatballs, My version of the Starbucks Vivano, Breaded Ranch Chicken, Black Bean Southwestern Chili, or Bacon Cheeseburger Meatballs.  Or you can look at my entire compiled list of Monday Meal recipes thus far here.
