Monday Meals: Mediterranean Pizza

A couple of weeks ago, the King and I had a date night so we picked up a pizza from Papa Murphy’s (one of my favorite places to get a meal out since it’s still very cost effective) and a Slumdog Millionaire from our local library (it was very jolting but a great story!) because I had been on the waiting list for weeks for it (perfect timing!).  Since we didn’t have to feed the kiddos for the evening, we went a little crazy and got the Delite Grilled Chicken Mediterranean Pizza (not available at all locations apparently since I just looked at the online menu and it’s not listed).  Anyway, it inspired me to make our own version of it last night.

First I made the Whole Wheat, Oat, and Flax Pizza Dough .  After it was prebaked and ready to fill, I topped it with the following:

  • Basted the crust with Olive Oil and sprinkled with garlic (if you wanted to use sauce, you could)
  • Sundried Tomatoes (I used 1/3 of the package and froze the other 2/3 for the future)
  • Grilled Chicken (~ 1 1/2 breasts of the chicken that I had grilled over the weekend)
  • 4 Mushrooms sliced
  • ~ 1/2 cup fresh spinach
  • ~ 1 cup of mozzarella cheese
  • ~ 1/3 cup of Feta Cheese
  • Pizza seasonings sprinkled over the top
This was so fantastic that I can’t wait for lunch time to come so that I can eat the leftovers.  🙂  And because of the many items on the pizza and the nutritional content of the dough, it was super duper filling.  Two pieces more than enough filled me up.
