So I’m slacking off in a few of ways with today’s recipe. I usually try to bring you a recipe that is slightly originally (although almost always based on a recipe I’ve read elsewhere) and something that I’ve already made. This recipe is pretty much a straight up link and I’m making it later in the week, not today (or last week). Thirdly, most weeks I prefer featuring a main dish rather than a side. I know I’m a slacker. Please forgive my insolence.
This recipe was featured on the cover of this month’s Midwest Living and I was so intrigued that I just had to try it. We LOVE sweet potatoes for a number of reasons and I’ve experimented with fixing them numerous ways but never on the grill before. Now, keep in mind the recipe states you do have to cook them for ~ 8 minutes in salted boiling water before placing them on the grill (with differing instructions dependent on the type of grill). There are also dipping sauce recipes – Honey Sesame & Creamy Chive – but I’m sure they’ll be good with plain ‘ole ketchup, too.
