I got very excited yesterday about a new opportunity (more about that tomorrow) and totally forgot to post this recipe. It’s what we’re having for dinner tonight and once again my measurements are a little fuzzy. I should cook with measuring utensils every once and awhile, right? Without further ado though Bacon Cheeseburger Meatballs!
1 to 1 1/2 lbs. of ground turkey (or you could use lean ground beef)
1 tsp. of seasonings (I like to use Country Bob’s but you could use any grilling seasoning you like)
dash of salt
dash of pepper
1 egg white
1/2 cup of quick oats (or more if you want to make things stretch further)
1/3 cup of Ketchup (we usually buy organic to avoid High Fructose Corn Syrup)
1 tsp of mustard (more if you’re a mustard fan)
1 T of bbq sauce (optional)
3-4 strips of pre-cooked bacon
1 1/2 cups of your choice of cheese
Preheat your oven to 375. Add seasonings, salt and pepper, and egg white to meat. Mix well with your hands. Mix in quick oats and then follow with ketchup, mustard, bbq and bbq sauce mix. Cut bacon into small pieces and then add it and the cheese. Form into meatball shape and place into a lightly sprayed 8×8 glass baking dish. Drizzle ketchup, mustard, and bbq sauce on top. Bake for ~35 minutes or until meat is cooked throughout and smells divine. 🙂
We’re having this dish with green beans and mashed sweet potatoes tonight. YUM. You could serve it with any number of sides though (potato salad or chips, a salad or french fries) as it’s very flexible. The eldest princess devours these (although I do not drizzle mustard on hers as she won’t eat them with it). Enjoy picnic flavors in the middle of winter.
