I accidently caught this recipe on Rachael Ray last week. The Eldest Princess was so enthralled with the idea of it that we knew that we’d try it this week. We made a few alterations to fit our family though. Here’s the plan for tonight. I’ll update you tomorrow on whether or not it’s a keeper.
Cheeseburger Slider Salad
1 lb ground turkey burger
1 egg white
1/2 cup quick oats
1/3 cup ketchup
2 t yellow mustard
Salt, Pepper, or Burger Seasonings
Mix the above together and form into small slider sized patties. Place patties on foil and heat up your grill. Rachael’s recipe has you fry them inside which would be good but we’re going to grill ours out. Turkey burger has a tendency to fall apart on my grill due to the lower fat content. I like to start it out on foil and move it to the grill once it’s solidified. After you have grilled them to satisfaction, top with sliced cheese. We have Munster and Colby Jack right now so that’s what we’ll use.
While you’re cooking your burgers, prepare your salad. Use anything in it that you’d like on top of a burger. I’ll be using:
Romaine Lettuce
Roma Tomatoes
Sweet Vidalia Onions
Chopped Bacon
Sweet Pickles
Now to make your dressing! You can either choose to make a Yellow Mustard Vinaigrette or a Ketchup Vinaigrette. I’m betting that a Thousand Island Dressing would make this taste just like a Big Mac, too.
Wisk together 3 T of either Mustard or Ketchup with 2 T Apple Cider Vinegar and 2 T of Extra Virgin Olive Oil. You could also add a touch of brown sugar or Splenda for a bit of sweetness.
We’ll be eating it tonight with 100% Whole Wheat Toast and Olive Oil to dip it in. YUM. I’ll try to remember to take a picture or two to share tomorrow if I remember. 🙂
