Here’s what’s being served up on the Royal Table this week:

Monday: Mini Cheeseburger Salad with Yellow Mustard Vinaigrette
               (based off of a Rachael Ray Recipe I saw last week) and Today’s Monday Meals Recipe
               Toast with Olive Oil

Tuesday: Taco Pizza
                Crust recipe here topped with:
                Mexican Seasoned Ground Turkey Burger
                Black Beans
                Mexican Cheese
                After it’s baked:
                Chopped Romaine
                Black Bean and Corn Salsa
                Drizzled with Avocado Ranch Sauce

Wednesday:  Coconut Top Crust Flounder (found it @ Aldi and it looks YUM-o)
                     Green Beans
                     Mashed Sweet Potatoes
                     Apple Sauce

Thursday: Crustless Egg White Quiche
                 with Mushroom, Spinach, Sweet Onion, Bacon, and Cheese
                 Scrambled Eggs for the girls
                 Toast
                 Peach Slices

Friday: Mediterranean Pizza for the King and I
            Cheese Pizza for the girls

Saturday/Sunday: PBJ, Veggies, Cut Fruits, Triscuts
                             Grilled Chicken Sandwiches
                             Grilled Chicken Salads
                             Chips

You’ll note that I’m a little more vague on the weekends as we’ve also been eating leftovers lately, too.  🙂  We have made a pact not to eat out during the month of June.  No special reason but every once and awhile we put ourselves up to the test.  The first 7-10 days are always a bit of a challenge but after that it gets much easier.  Last summer/into the fall we went close to 90 days without paying for eating out (we did have our parents treat us to a meal upon occasion and we used free coupons to get a few things but we did not spend any cash) just to see how long we could last.  🙂  It was fun and we stopped for no special reason – more of a we’re starved on the way home from church sort of scenario.
