Monday Meals: Kinda?

So it’s not a meal recipe this AM, just a great quick bread recipe that I found yesterday when making some bread to go with our lunch.  Believe it or not, I followed the recipe as is and did NOT alter it in any way.  Shocker, I know.  However, I did see great potential for altering it since it’s a very basic recipe.  Without further ado:

Oatmeal Whole Wheat Quick Bread 

1 cup rolled oats
1 cup whole wheat flour
2 t baking powder
1 t salt
1 1/2 T honey
1 T vegetable oil
1 cup milk

Pre-heat your oven to 450 degrees F.  Grind the oatmeal in a blender (I used our Magic Bullet that we’ve had forever and is one of the handiest tools we have in the kitchen).  In a large bowl, combine dry ingredients.  In a separate bowl, dissolve honey in the vegetable oil and milk (I admit, I mixed everything in one bowl.  I’m a cheater.).  Combine both to form a soft dough, form into a ball, and put on a lightly oiled baking sheet.  I used a non-stick loaf pan.  I also dusted ours with some rolled oats.  So maybe I did alter it a little?

Bake for twenty minutes or until loaf sounds hollow when tapped.

Now, I’m thinking it would be easy to add fruit (apples, bananas, maybe even pears or applesauce) to sweeten the bread.  Or it would be great to use olive oil and spices for a more italian styled bread.  Great potential!  And I bet you have all of these ingredients in your cabinet right now.  A great really quick and yummy bread.  Enjoy.
