Who doesn’t love the taste of Egg McMuffins? Why not turn the favorite breakfast sandwich into a casserole? I’ve used our family friend Roxann’s Egg Casserole recipe for years. With a few easy swaps, I turned it in to a McDonald’s styled dish – an Egg McMuffin Casserole. The result is delish!
Ingredients
4 English Muffins Toasted
1 6 oz. Package Canadian Bacon
8 Eggs
2 Cups of Milk
2 Cups of Shredded Cheese
Salt and Pepper to Taste

- Preheat the oven to 350 degrees.
- Butter or spray a 9×13 pan with nonstick spray.
- Toast English Muffins and then cut into bite sized pieces.
- Add pieces to pan.
- Cut the Canadian Bacon into fourths.
- Add Canadian Bacon to the pan.
- In a large bowl, whisk together the 8 eggs and 2 Cups of Milk.
- Optional: Add 1 t. of salt and pepper. You can cut this if you’re looking to reduce the sodium.
- Add 2 cups shredded cheese to the egg mixture.
- Pour the egg mixture over the 9×13 pan.
- Bake in pre-heated oven for 40-45 minutes or until the middle of the casserole is set.

A Few Notes:
If you like American Cheese, I have a feeling this casserole would taste even more like an Egg McMuffin if you swapped it out. I used Sharp Cheddar and thought it still replicated the flavor well. You’ll find the Canadian Bacon near the pepperoni in the refrigerator portion of your grocery store. I toasted the English muffins in our toaster but you could probably do all of them at the same time in the oven a little bit more quickly. While we’re replicating the flavor of an Egg McMuffin, I see no reason why you couldn’t use the actual sandwich. You’d want to cut them into bite sized pieces. Also, reduce the number of eggs and amount of milk in the egg mixture. You probably wouldn’t need the shredded cheese or to use less of it. If you give it a whirl, let me know in the comments.
The Verdict
McWOW. This casserole is yummy, too. You can easily make it the night before and pop it in the oven when you get up in the morning. I love how easy this recipe is to whip together, too. Prep time is less than 15 minutes even with toasting the English muffins.
