‘Tis the season for holiday snacking. But with the wrapping and the shopping and the decorating and the fa, la, la-ing, there’s not much time left to prepare elaborate holiday dishes. Enter easy these recipes that can be made without much thought or hassle. Whether you need a a sweet treat or a savory bite, check out these three ingredient Christmas snacks to keep your elves happy and full of delight.
Cap’n Crunch Christmas Mix
This holiday favorite has been a tradition in our household as long as I can remember. I love how simple the recipe is and how quickly you can prepare it.
Here’s what you need:
- 1 Box of Cap’n Crunch (Christmas Crunch if you can find it!)
- 1 Package of Vanilla Almond Bark
- 1 Can of Cashew Halves and Pieces
Melt the almond bark on low in a large pot on the stove top. Once it’s liquid, slowly add the cashews. After you’ve coated them well, gradually add the box of cereal. Once the cereal is thoroughly coated, spread on a large piece of parchment paper to let the mix dry fully. It should take about thirty minutes and you’ll know it’s ready once it’s no longer tacky to the touch. Once dry, break and crumble the mix into pieces. Bag and give away as a treat gift or put in a bowl and prepare to become addicted.
Baked Blackberry Brie Pastry
I love cheese. Melted cheese is even better. This simple Baked Blackberry Brie Pastry is delicious served with apples or or crackers or completely on its own.
Here’s what you need:
- 1 Package of Brie Cheese
- 1/4 cup of Blackberry Fruit Spread or preserves
- 1 sheet of Frozen Puff Pastry
Thaw the puff pastry according to package directions. Place in the middle of a greased or nonstick cookie sheet. Unwrap the brie and place in the center of the pastry. Leave the rind on the cheese. Spread 1/4 cup to 1/2 cup of the blackberry fruit spread on the top of the cheese. Gather the edges of the puff pastry around the cheese. Bake at 425 degrees for 20 – 25 minutes. Best when served warm!
Simple Crockpot Chili Cheese Dip
Set it and forget dips are the best! This one takes little effort but always yields a great crowd pleasing result.
Here’s what you’ll need:
- 1 Can of Chili Without Beans
- 1 Package of Cream Cheese
- 1 Cup of Shredded Cheddar Cheese
Place all three ingredients in a crockpot on the low setting for approximately an hour. Stir. Let continue to cook for another 30 minutes. If you’re in a hurry, you can set the slow cooker on high and check back in 30 minutes to stir. If you need to, you could put the ingredients on a warm setting and let cook together 3-4 hours. Personally I like to put a little extra cheddar cheese on top. Serve with your favorite tortilla chips!
Hot Cocoa Ice Cream Cake with Toasted Marshmallow Topping
This is one of those Internet recipes I just had to try for myself! Did you know you can use melted ice cream and flour to make a cake?! WHAT?! The original recipe we found used a pumpkin spice ice cream but we decided to take things in a hot cocoa direction.
Here’s what you need:
- 1 Pint Melted Ice Cream (Choose a holiday flavor!)
- 1 1/2 Cups of Self Rising Flour
- 2 Cups of Marshmallow Fluff
Begin by letting your ice cream melt. Then beat it together with the flour. Place in a greased or nonstick 8″ cake pan. Bake for 25-30 minutes at 325 (or until a toothpick comes out clean). Let cool. Top with the marshmallow fluff. If you like, you can broil the topping so it becomes nice and toasty just for 2-4 minutes on low. Keep an eye on it and it may need more time depending on the heat of your broiler.
