Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

September 26, 2011 By Cherie Lowe

Last night, I spent a great bit of time in the kitchen while I was listening to the Colts game on the radio {we no longer have tv except for Netflix streamed}.  I got a lot of prep work completed for this week including planning our meals {and Tuesday’s dinner is in the freezer, too WOOT}.  It feels good to have a handle on the week’s food.  I’m sure it will keep everyone’s bellies full and my craziness under control.

If you want to see some of the recipes that I’m crushing on right now, check out my Pinterest Recipes & Food Ideas board.  A few of the dishes from this week’s meal plan come directly from there.  I <3 Pinterest! Monday:  Black Bean Tacos
                 With Homemade White Nectarine Salsa {from the freezer}
                  Cheese, Spinach, and Veggies
                  Sliced Strawberries

Tuesday:  Homemade Whole Wheat Mac N Cheese for the Girls
                  Spaghetti Squash with Fresh Garlic, Tomatoes, Onions, and Spinach for the King & I
                  Peas
                  Baked Peaches or Apple Sauce

Wednesday:  Grilled Chicken
                       Smashed Red Potatoes
                       Mashed Parsnips {a first for us! hence the red potatoes in case we don’t like ’em}
                       Green Beans
                       Baked Apples

Thursday:  Grilled Cheese with Apple Slices Grilled into the Sandwich {Eldest Princess’ fav!}
                    Red Roasted Pepper Soup {from the box :)}
                    Sweet Potato Fries
                    Apple Sauce

Friday:  Baked French Toast Bites
               Frozen Mixed Fruit {dethawed}
               Roasted Sweet Potatoes

 Saturday: Lunch: Leftovers
                   Dinner:  Salad Bar
                                 Whole Wheat Garlic Toast or Rolls
                                 Red Grapes

Sunday:  Salsa, Black Bean, and Rice Soup
                Served with Chips, Cheese, and Avocado
               {lunch and dinner}

Breakfasts:  Cheerios, Pumpkin Oatmeal, Toast, Juice, Coffee, Pancakes and Eggs {weekend}

Lunches:  PBJ, Pretzels, Grapes, and Sliced Carrots

Snacks:  Homemade Granola Bars, Sharks {generic goldfish}, Pretzels, Triscuits, Graham Crackers, Almonds, Apples, Cheese, Pistachios, Cheerios, Popcorn

This is the sheet that I use every week to plan my meals.  It’s nothing fancy but it gets the job done.  I have recently been playing with the Food on The Table App, too.
