I’m really scouring the cabinets this week to use what we have in the pantry (remember my beautiful pantry?  Happy to say it still looks that way!).  Luckily the King and Eldest Princess made due without using some of the meals I had planned for them over the weekend which should make today easy for me.  🙂

Here’s what we’re having on the Royal Table this week.

Monday: Turkey Blackbean Meatloaf (based off of this recipe)
                Homemade Cole Slaw (longing for summer!)
                Mac-n-Cheese (yay for great coupons from Annie’s)

Tuesday: Omelets (thanks to Con Agra for great coupons for Egg Beaters for Blissdom attendees)
               With Bacon, Spinach, Mushrooms, Red Onion, and Cheese
                Toast (I *heart* Lady Laurie from Brownberry)
                Fruit Salad

Wednesday: Veggie Parmesan Whole Wheat Pasta
                     with Squash, Mushrooms, Red Onion, Broccoli
                     Baked Chicken
                     Toast/Olive Oil

Thursday: Taco Night!
                  Naked burritos with Ground Turkey, Cheese, Black Beans
                  Quinoa, Spinach, Salsa, Avocado

Friday: Turkey Pepperoni Pizza with Veggies
             I’ve mentioned before that this is my favorite “Quick Crust.”  My homemade recipe is here.
             Mama Mary’s didn’t even give me free crust for that one!  🙂  They can be found at Meijer,
             Kroger, and Walmart and are delish and quicker than frozen pizza plus healthy!
             Apple Sauce

Saturday: Leftovers/PBJ/Pizza

Sunday: Beans and Rice Sunday
              Black Beans, Brown Rice, Cheese, Veggies
              Fruit Salad
