Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

August 2, 2011 By Cherie Lowe

Ah, another Monday.  Let’s face it, much like poker, money is made and lost at the table when it comes to personal finance.  If you don’t plan out what you’ll be eating {whether at home or for lunch} you’ll end up spending a lot more either in the drive thru or at the grocery store.

Here in the Queendom, I am ready for fall and not just because I want the hot weather to subside.  I’m ready to fix some of our family’s fall favorites – soup, apples, crockpot dishes.  Plus I’m using the crockpot more to keep the heat down in the house, too.  WHEW.

Anyway, here’s what’s for dinner on the Royal Table this week.

Monday:  Pork, Black, Bean and Salsa Soup *made with yesterday’s left over pulled pork*
topped with Cheese and Tortilla Strips
                 Sliced Strawberries
                 Fresh Cucumbers from the Garden

Tuesday:  BBQ Pork Roll Ups
with Cheese, Spinach, Onions, Red/Yellow Pepper
                  Carrots and Hummus or Ranch
                  Leftover soup

Wednesday: Grilled Chicken
                      Baked Sweet Potatoes
                      Salad
                      Apple Sauce

Thursday:  Dinner with Family/Pitch-In

Friday:  Leftovers/PBJ
               Fresh Cut Veggies
               Fresh Fruit

Saturday:  Brunch – Omelets, Whole Wheat Toast, Fresh Fruit, Turkey Sausage
                   Dinner – Party at a Friend’s house

Sunday: TBD Maybe lunch out!  🙂  At least for everyone but the King of Free.

What are you having this week?  Have some late summer recipes to inspire me with that involve little cooking?  It’s simply too hot.

Don’t forget you can list out your meals and grocery lists on this handy dandy tool.
