Monday Meals: This Week’s Plan

Since I didn’t share a main dish with you today, I thought I might go ahead and share our meal plan for the week.  It’s not something I do often on here.  I feel like I might bore you!  But today, I thought it might be fun for you to see a week in the life.  I think that I’ve mentioned before that I meal plan for 1-2 weeks ahead of time just to evaluate what we already have before I go grocery shopping.  I am also flexible with what we have.  If I need to switch items around or even entire meals, I have no problems doing so.  And lastly, I also like to stock pile and pre-cook as much as possible.  When I can, I double a recipe and freeze half or I fix individual components (pizza dough, black beans, pasta) ahead of time and freeze them.  Unfortunately, we have a fairly small (usually packed) freezer so I can’t get too far down the road (oh how wonderful that would be!) but it’s enough to keep me from feeling overwhelmed during the dinner hour.

I’ve rattled enough, here ya go:

Monday: Black Bean Turkey Burgers on Whole Wheat Toast
               Roasted Sweet Potatoes
               Green Beans

Tuesday: Apple Chicken
                Broccoli
                Rice
                Mashed Sweet Potatoes (they had a great bag of them @ Aldi, what can I say?)

Wednesday: Chicken Ringos (I get these @ Walmart for $3.97; they’re better than most nutritionally)
                     Spaghetti
                     Spinach Salad

Thursday: Pancakes (working on a recipe for a mix this week to keep in the cabinets)
                 Eggs
                 Bacon

Friday: Salmon Sandwiches on Whole Wheat Toast with Avocado Mayo, Lettuce, Tomato
            Fiesta Fruit
            BBQ Kettle Chips
            Fresh Veggies

Saturday: Chicken Parmigiana
                Penne Pasta
                Spinach Salad
                Oatmeal Whole Wheat Quick Bread
                *enough for lunch and dinner

Sunday: Salsa Soup (with Chicken, Black Beans, Brown Rice)
              Queseo
             Blue Corn Chips
             Avocado
             *enough for lunch and dinner
