Happy Monday Lords and Ladies!  My day started later than usual and that’s a great thing.  I may have mentioned before that the Youngest Princess rarely sleeps past 6 AM and I’m proud to announce that she did not get up until 6:10 AM today and I felt like I had slept til 10.  How crazy is that?  Anyway, I’ve been calendaring, chopping, cooking, and cleaning this morning with great energy and zest due to a little extra sleep.  WOO HOO.

Here’s what we’re eating on the Royal Table this week:
Monday: Slow Cooker Pulled BBQ Chicken (recipe to follow today, just for you Lady LeandraCat)
               Green Beans
               Organic Mac and Cheese
               Fresh Baked Bread
Tuesday: Egg Casserole with Cheese and Turkey Sausage 
               Fruit Salad
               Leftover Bread
Wednesday: Pizza with Turkey Pepperoni,
                     Spinach, Red/Yellow Peppers, Mushrooms, and Red Onion
                     Plain Cheese Pizza for the kiddos
                    Spinach Salad with plenty of veggies 
                    Apple Sauce
Thursday: Pulled BBQ Chicken with Parmesan Pasta, Peas, and Mushrooms
                 Spinach Salad with Veggies
                 Baked Apples
Friday: Black Beans, Brown Rice, Salsa
            with Cheese, Spinach, Avocado, and Sour Cream
            Fruit Smoothies
           * I used my crockpot to prepare brown rice over the weekend and it was DELISH!  
            Seriously, we ate it all weekend, even for dessert.
            (a little agave, some cinnamon, a tsp of Smart Balance Light and it was like CANDY).
Saturday: Lunch: Leftovers, PBJ, Fresh cut veggies, Fruit
                Dinner: We’re having a fiesta night with our Life Group.  
                We’re in charge of bringing Black Beans and Fresh Salsa.  YUM!
Saturday: Lunch: Chili with PB sandwiches
                Dinner: Baked Spaghetti (from the freezer)
                Spinach Salad
                Fresh Bread
When you’re planning meals, preparation is the key!  I almost always have peeled and chopped carrots, sliced onions, chopped mushrooms, red and yellow peppers, a cucumber sliced on hand, and a bag of pre-washed spinach.  It means that we can easily always have a salad (for a main or side dish), omelets, pizza toppings, or the ability to spice up leftovers (i.e. the left over spaghetti I was going to have lunch looks MUCH more appetizing with the veggies topping it).  I either prepare veggies the day I bring them home or on Monday morning.   It keeps us eating healthy AND makes throwing together a meal SO much easier!  It’s a small change that might make a big difference for your family.  It has for ours.
