Hey there. Long time, no meal plan post, right? I took a wee bit of shall we say a sabbatical? So while I PROMISE I still did meal plan, I just wasn’t as faithful about posting it here. Now that we’re back into the full swing of the school schedule, I am living and dying by the meal plan. Without it, life would completely flop, lunch boxes wouldn’t get packed, we’d be in the drive thru every. single. night. Back to School = Back to the Intentional Meal Planning. Plus, I’m *trying* to shift to a new every 2 week grocery shopping schedule (the less you’re in the store, the less you spend), so I’m really amping up my already uber-planner tendencies.
If I don’t have a plan, I know I’ll fail when it comes to best using our resources, money, and time without a meal plan. I don’t always follow our meal plan to a T but there’s a relief in knowing that we have all of the items to make meals all week long that we need. That way, we use the groceries we have and stay out of the drive thru {obviously saving money!}. Regular meal planning was one of the many keys to us paying off $127K in 4 years. Simply paying attention made huge waves in our finances.

Pasta with Marinara (I’m now fixing 2 types of pasta because 1 of us went Gluten Free)
Left Over Shredded Chicken, Mozzarella, Parmesan Cheese, & Garlic Toppings

Thursday:
Homemade Pizza (Trying Out Bob’s Red Mill Gluten Free Pizza Crust Mix)

Leftover Night!

Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt. Often I swap days or side items to make our menu plan work but the main purpose is to make sure I have everything on hand I need for meals throughout the entire week. The less you go to the store, the more money you save!
