Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

I wonder if you’re like me . . .

  • you’ve tried meal planning but then didn’t follow the plan.
  • you’ve wanted to plan your meals but didn’t know where to start.
  • you’ve gone through phases of successful meal planning followed spurts of drive thru madness.
  • you find you let food go to waste in your refrigerator and it frustrates the tar out of you.
Sir Winston Churchill said, “Success is the ability to go from one failure to another with no loss of enthusiasm.”  Said another way, it’s really all how you look at it.  Sometimes failing is not such a bad thing.  It gives that pinch and prod to seek out the right direction.  So if you have fallen off the meal planning wagon, today’s the day to get back on board to better manage your resources and your money.
Here’s what we’re having on the Royal Table this week:
Monday: Whole Wheat Rotini with Tomato Basil Sauce, Ground Turkey, and Mushroom
Topped with Cheese (making 2 and freezing one)
                Fresh Cut Veggies
Toast with Olive Oil and Seasonings
Tuesday: Omelets with Turkey Sausage
                Fresh Veggies, and Cheese
                Sliced Strawberries
                Toast
Wednesday: Mini Black Bean Turkey Meatloaves (from the freezer)
                    Green Beans
                    Organic Macaroni and Cheese
                    Apple Sauce
Thursday: Veggie Pizza (Cheese for the girls)
topped with Spinach, Mushroom, Red/Yellow Pepper, Red Onion
                 Mozzarella, Feta, and Parmesan Cheeses
Friday: Honey Mesquite Shrimp on Spinach Salad
with Carrots, Cucumber, Tomato, Boiled Egg, Cheese, Avocado, and Red/Yellow Pepper
             Toast and Olive Oil
Chicken Ringos for the girls with fresh veggies
Redbox Movie Night with Popcorn popped on the stove.  YUM!  It’s my new thing!

Saturday: Leftovers for lunch
Dinner: Black Beans with Brown Rice
Salsa, Spinach, Cheese, Sour Cream, and Avocado
                             Pear Blueberry crumble
Sunday: Lunch: Leftover Beans and Rice

              Dinner: Taco Pizza
What about you?  What are you eating this week on your table?
