Today’s Monday Meal is more of a side dish but it was so yummy I couldn’t pass up the opportunity to share this recipe with you. I found this recipe in Women’s Health Magazine . It’s one of the only subscriptions that I get and I LOVE it. I tried it last week and it was YUMMY.
2 T Canola Oil
1 Large Granny Smith Apple, peeled and sliced into thin matchsticks
1/2 c Thinly Sliced Onion (I didn’t have any so I didn’t use it but it would be good)
3 Medium Sweet Potatoes, cut into thin matchsticks (about 2 cups)
1 t of cinnamon
1) In a large skillet, heat 1 T oil over medium-high heat. Add apple and onion and cook until soft (about 4 minutes). Set aside in a covered bowl.
2) Add 1 T oil to skillet. Spread potatoes in pan in an even layer and press them down lightly with a spatula. Cook until golden brown on the bottom (about 5 minutes). Drizzle with the remaining oil and flip potatoes. Cook for about 5 more minutes.
3) Add apple and onion mixture to potatoes and heat through. Sprinkle with cinnamon and add salt and pepper to taste.
While it was a little difficult to cut the sweet potatoes thin enough (I don’t think I have the right tool), this was still DELISH! I think next time I’ll try to fix them on our griddle and eliminate the oil (or at least reduce it).
