Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

September 14, 2009 By Cherie Lowe

Here’s what’s for dinner on the Royal Table this week!

Monday: Black Bean Turkey Meatballs
               Grilled Corn on the Cob
               Mashed Sweet Potatoes
               Green Beans
               Apple Crumble Stuff
Yay, we’re having a friend over for dinner so I’m adding an extra side this evening.  🙂

Tuesday: Homemade Pizza
with Ricotta, Turkey Pepperoni, Red Onion, Mozzarella, and Fresh Basil
               Spinach Salad

Wednesday: Grilled Chicken Nachos
with Black Beans, Salsa, Corn, Mexican Cheese, and Sour Cream
Homemade Pear Sauce (in the crockpot)

Thursday: Grilled Chicken and Whole Wheat Homemade Mac-n-Cheese

                     (freezer meal made last week)
                     Green Beans
                     Apple Sauce

Friday: Omelets
            Pumpkin Dark Chocolate Chip Waffles
            Fruit Smoothies

Saturday: Leftovers, PBJ, Chicken Ringos, Veggies

Sunday: Pizza Soup (a family fall favorite!)
              Whole Wheat Pepperoni Rolls

Planning meals for your family saves you time, money, and oh yeah your sanity.  Even if you just take five minutes to jot down what you’re eating this week on a scrap of paper that you found under a stack of junk mail on your counter (or better yet, write right on the junk mail itself), it’s a step toward living more frugally and with more peace in your life.  Peek in your cabinets, fridge, and freezer to see what you already have so that you don’t buy too much at the store this week and bust your budget.  I have a theory that every family has at least 2 meals in their home even when they think there’s noooootttthhhhiiing to eat.
