Gracious sakes alive, is it Monday already? It’s going to be a busy week here on QoF. As you know, it’s the best time of the year for me. Love the turkey, but love me some Black Friday Sales even more! SO, expect a whole lot of content on here over the next three days. I am BURSTING at the seams to share with you my favorite Black Friday deals and strategies and don’t even get me started on Cyber Monday people! We have some money saving to do this holiday season.
But first of all, we’ve got to eat. I’m striving to eat up everything fresh in our fridge and cabinets so that nothing goes to waste while we’re visiting family most of the week. So that means LOTS of veggies for EVERYONE. 🙂 And eggs. And milk. Waste not, want not, ya know? Here’s what’s for dinner on the Royal Table this short week!
Monday: Black Bean Turkey Meatballs
Roasted Sweet Potatoes
SALAD (2 or three servings!)
Tuesday: Grilled Chicken Salad
with Romaine Lettuce, Red/Yellow Peppers, Cucumbers, Mushrooms, Carrots,
Avocado, Cheese, Egg
Toast/Olive Oil
Wednesday: Leftovers and/or Egg Sandwiches
Fresh Veggies and Fruits
And as soon as dinner is over . . . over the river and through the woods (or at least down I-70) we go! I am planning on making a few things this week in preparation for the feast(s) with family over the holiday. Up on the list today, a delicious healthy Pumpkin Muffin recipe that I plan on sharing with you in the evening hours.
