Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

October 4, 2010 By Cherie Lowe

Can I just say that not having a kitchen sink is PURE misery?  My meal plan was completely upside down for the last week and a half.  I wasn’t able to cook much because I wasn’t able to dirty the pots and pans necessary to cook.  And it turns out, I use a lot of pots and pans on a regular basis.  Who’da thunk it?  Plus that whole we rarely eat out at restaurants sort of principle was a bit of a bear.  But we survived and as of 6:30 PM last night, we’re running free in the sink in the kitchen.  WOOOHOOO.  So it’s back to normal here in the Queendom as far as meals go.  Here’s what we’re having on the Royal Table this week.

Monday: Baked Spaghetti with Peppers and Spinach
               Toast and Olive Oil
               Baked Apples

Tuesday:  Slow Cooked Pulled Chicken
                Black Beans with Brown Rice
Topped with Cheese, Spinach, Salsa, and Sour Cream
                Whole Wheat Pumpkin Bread
(I use less brown sugar, no pecans, and 100% Whole Wheat Flour)

Wednesday: Egg Sandwiches on Whole Wheat Bread
                    Sweet Potato Hashbrowns
                    Fruit Smoothies

Thursday: Chicken Tortilla Soup
                 Tortilla Chips
Baked Pumpkin Pudding (Using Almond Milk and less Splenda)

Friday: Homemade Pizza
with Turkey Pepperoni, Red/Yellow Peppers, Mushroom, and Red Onion
            Served with a Spinach Salad

Saturday: Leftovers, PBJ, Fresh Cut Veggies, Grapes, Apples

Sunday:  Soup (TBD)
               Fresh baked Whole Wheat Bread

What about you?  What are you having on your Royal Table this week?  Any fall favorites that I should know about?  Don’t forget you can use this handy dandy tool to keep track of your meal plan and grocery lists.
