Y’all last week was ROUGH. We had the stomach flu and by we I mean primarily the King of Free who never gets sick and then me with a slightly lesser version. Laundry, bleach, two nights on the couch, horrific visions of their parents being sick for the princess (Zoe actually cried because it was so frightening). Missed appointments, fewer miles run, and an upside down world. Today, I finally feel like we’re almost back into a routine. We kicked Spring Break off well with a Nerf Rebelle House Party this morning. This was so very good for my procrastinating soul because it meant I did things like “sweep the floor” and “wash the dishes” and “clean the mirror in the bathroom.” I know they’re routine activities for most but since I’ve been so busy editing the book (and tending to end times bad stomach flu), I have given myself a pass for cleaning. Who am I kidding?! I hate cleaning even when I have nothing to do and feel great.

With clean laundry in the drawers (I just remember there’s some in the washer and dryer right now, too), plenty of clean dishes, swept and dust mopped floors, I’m ready to get the meal plan for this week finalized. We’re taking a couple of Spring Break day trips but overall, we’ll be hanging out at home. So here’s our plan for meals this week.

If I don’t have a plan, I know I’ll fail when it comes to best using our resources, money, and time without a meal plan. I don’t always follow our meal plan to a T but there’s a relief in knowing that we have all of the items to make meals all week long that we need. That way, we use the groceries we have and stay out of the drive thru (obviously saving money!). Regular meal planning was one of the many keys to us paying off $127K in 4 years. Without further ado, here’s what’s for dinner on the Royal Table this week:

Monday:
Chili (in the crockpot)
Topped with Cheese & Tortilla Chips
Sugar Snap Peas (I am addicted right now) & Carrots
Apple Slices

Tuesday:
Dinner at Some Friends’ Home

Wednesday:
Cheeseburgers
Roasted Red Potatoes
Grilled Asparagas
Sliced Strawberries

Thursday:
Ham & Cheese Sandwiches
Mixed Greens Salad
Crockpot Apples

Friday:
Grilled Chicken
Veggie Kabobs
Pineapple Rice

Saturday:
Brunch – Cereal, Ham & Eggs, Fruit, Nuts, Granola

Dinner:
Baked Chicken
Mashed Potatoes
Salad
Cinnamon Apples

Sunday:
Leftovers

Dinner:
Pizza

Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt. Often I swap days or side items to make our menu plan work but the main purpose is to make sure I have everything on hand I need for meals throughout the entire week. The less you go to the store, the more money you save!
