I cannot believe it’s March already. My head has been swirling with deadlines, stress, and excitement as we begin the process of editing the book Slaying the Debt Dragon. Clueless rookie is an understatement around these parts, but I’m more golden retriever excited than worry wort overwhelmed. Even still, I’m doing everything I can to prepare meals and portions of meals in advance so that I can focus on writing more and cooking less. That meant yesterday I spent most of a snowy Sunday in the kitchen chopping veggies and making freezer meals. It was a long day on my feet but I know it will be worth its weight in gold.
That also means it’s time for me to share our plan for meals this week. It’s a pretty basic week with plenty of easy standbys but even if I don’t bring down the house with a stellar meal, everyone will be fed and relatively healthy around these parts.
If I don’t have a plan, I know I’ll fail when it comes to best using our resources, money, and time without a meal plan. I don’t always follow our meal plan to a T but there’s a relief in knowing that we have all of the items to make meals all week long that we need. That way, we use the groceries we have and stay out of the drive thru (obviously saving money!). Regular meal planning was one of the many keys to us paying off $127K in 4 years. Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt. Often I swap days or side items to make our menu plan work but the main purpose is to make sure I have everything on hand I need for meals throughout the entire week. The less you go to the store, the more money you save!
