Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

April 19, 2010 By Cherie Lowe

Greetings Money Saving Lords and Ladies!  I hope your week is off to a great start.  The sun is shining in the Queendom and I’ve been enjoying it even though I’m inside.  Since it’s Monday, I’ve been chop, chop, chopping fruit and veggies.  My compost bin runneth over.  Anyway, once again you’ll notice I moved a meal from last week into this week.

The King of Free really never requests a specific dish.  And for the last week and a half, he’s wanted Chicken Parmesan.  So tonight, that’s what we’re having!  I still can’t believe that he’s gone almost four months without eating anything from a restaurant (even if someone else is paying).  He’s a beast.  And by the way, he’s still working on his Freedom Friday post.  He’s a perfectionist but he does have some tips and thoughts to share with you.  I promise.

Anyway, here’s what we’re having on the Royal Table this week!

Monday:  Chicken Parmesan (with whole wheat bread crumbs of course)
Whole Wheat Pasta with Tomato Basil Sauce
                 Spinach Salad
                 Toast/Olive Oil

Tuesday: Grilled Veggie Kabobs with Zucchini, Mushrooms, Red Onions, Red/Yellow Pepper
                Served on a Spinach Salad
                Grilled Pineapple
                Leftover Pasta for the girls
                Fruit Salad

Wednesday:  Black Bean Turkey Burgers (based on the meatball recipe)
                      Sweet Potato Chips
Prince Edward Veggie Mix (Green Beans, Wax Beans, Carrots)
                      Apple Slices

Thursday: Veggie Pizza
                   Fresh Cut Veggies
                   Apple Sauce

Friday: Pancakes
             Bacon and Eggs
             Hasbrowns
             Fruit Salad

Saturday: Leftovers

Sunday: Lunch and Dinner: Pork Tenderloin Sliders
                                              Cole Slaw
                                              Black Beans
                                              Corn on the Cob
                                              Apple Sauce

What are you most looking forward to putting on your Royal Table this week?  Don’t forget you can use this handy dandy tool to plan your meals and keep a good grocery list on hand, courtesy of the Queen of Free.
