HOORAY, it’s MUCH warmer in the Queendom which means one wonderful thing in my honest opinion. FIRE UP THE GRILL! Woohoo. I LOVE grilled food – meats, fruits, cheese, you name it. So this week, I’m excited to use our grill for the first time this season.
Monday: Grilled Shrimp Fajita Salads
with Grilled Shrimp, Yellow and Orange Peppers, Mushrooms, and Red Onions
on a bed of Spinach with Black Beans, Salsa, and Cheese
Toast with Olive Oil
Tuesday: Grilled Veggies
on a Whole Wheat Rotini
tossed with Basil, Olive Oil, and Feta Cheese
Peach Crumble
Wednesday: Turkey Pepperoni Pizza
on 100% Whole Wheat Crust
with Mushrooms, Red Onion, Ricotta, and Mozzarella
Apple Sauce
Thursday: Black Bean Turkey Meatballs (making a double batch and freezing)
Green Beans
Sweet Potato Fries
Apple Slices
Friday: Omelets
Made with Egg Whites, Veggies, Cheese, and Ham
Homemade Granola with Yogurt, Strawberries, and Pineapple
Saturday: Lunch: Pizza (making 3-4 since we’ll have family over)
