So Ham Week, Part Deux didn’t go as well as planned. The natives began to get restless toward the end of the week. So we didn’t have ham and beans or omelets and I had to switch to Vegetarian Mediterranean Spaghetti Squash (which was amazing!) and some basics (grilled cheese, flatbread pizza, etc.). The ham was cut and frozen to save for a later date (i.e. some of it this week). Here’s what’s on the royal table this week.
Monday: Black Bean Southwestern Chili (leftovers from Sunday)

Tuesday: Egg Casserole with Cheese and Ham
Pumpkin Muffins
Baked Apples
Wednesday: Tortilla Crusted Ranch Chicken

Fresh Cut Veggies
Apple or Orange Slices
Friday: Homemade Pizza (Ham and Pineapple)
Spinach Salad
Saturday/Sunday: We’re celebrating Christmas so I don’t have to cook. YAY! 🙂
It is more important to menu plan during this time of the year than any other. With Christmas School Concerts, shopping, special gatherings with friends and family, our tendency to fall back on carry out goes up. While it might be necessary from time to time, planning ahead certainly cuts down on the frequency of dining out.
