As the fall temperatures drop, you can save money and time by whipping up quick and easy soups. Three of my favorite soup recipes don’t require much time or money. You’ll keep your family fed without breaking the bank. Plus, your yummy dinner can cook all day long, too.
Simple Salsa Soup
I call this my “can of” soup because it’s incredible easy to just dump it and go.
Ingredients:
- Large Jar of Salsa
- A Box of Chicken Broth
- Can of Black Beans, drained and rinsed with water
- 1 Cup of Frozen Corn
- A Can of Canned Chicken Breast
Empty the jar of salsa into a large crockpot. Fill the jar back up with the chicken broth (I use low sodium). Replace the lid and shake to get any salsa stuck to the jar come loose. Place the contents into the crockpot. Add the rinsed black beans and the frozen corn, stir. Finally, mix in the canned chicken. You’ll find this near the tuna at the grocery store. As an alternative, you could slow cook and then shred a boneless chicken breast, too.
Cook the soup on high for 2 hours or on low for 4 hours. Serve with fresh sliced avocado, shredded cheese, fresh cilantro, and sour cream or greek yogurt on top. A side dish of rice or tortilla chips are also a nice touch.
Creamy Tomato Basil Soup
I LOVE this simple soup. It’s my friend Tricia’s recipe (she found it online) and I love it even though I’ve never really liked a traditional tomato soup.
Ingredients:
- 2 Cans (28 oz) of Crushed Tomatoes
- 1 Can (14.5 oz) of Chicken Broth
- 18 Fresh Basic leaves, minced
- 1 teaspoon of sugar
- 1/2 Cup Butter
- 1 Cup Whipping Cream
Combine the broth and tomatoes in a large sauce pan on the stove. Bring to a boil. Reduce the heat to medium. Cover the pan and simmer together for ~ 10 minutes. Add the basil and the sugar. Reduce the heat too low. Stir in the cream and the butter. Cook until the butter is melted and the ingredients are well blended.
This soup is delightful with a drizzle of Aldi’s Specialty Select Balsamic Glaze, cubed fresh mozzarella, and even some fresh basil. And it pairs well with baked Italian bread and a salad.
Pizza Soup
This recipe, I adapted from a site I followed with intensity years ago, A Year of Slow Cooking. We are a basic pizza people so I nixed some of the veggies (even though I loved them) from the original recipe. This is a family favorite!
Ingredients:
- Large Jar of Pizza Sauce
- 2 Jars Full of Water
- 1 10 oz. Can of Crushed Tomatoes
- A Cup of Turkey Pepperoni Cut in Quarters
- A Cup of Lean Sausage Cooked and drained
- 8 Fresh Basil Leaves or 1/2 T of Dried Basil
- 1 T of Oregano
- Optional: Mushrooms, green pepper, and/or onions
I use kitchen scissors to easily cut the pepperoni into smaller pieces. Add all ingredients to crockpot and stir. Cook the soup on high for 2 hours or on low for 4 hours.This soup is amazing in bread bowls or with garlic breadsticks. Top with mozzarella cheese and/or parmesan cheese.
