Power Banana Bread

So we try to use everything up in our house.  Waste not, want not Aunt Millie would say (Kit Kittredge readers, that’s a little one for you).  So when the bananas are about to go bad, it means it’s time to whip up some banana bread in our kitchen which I did last night.  I was working off a basic recipe found on the whole wheat flour bag which I altered (I know you are completely shocked right now!).  Here’s what I came up with:

2 mashed bananas
3/4 cup of whole wheat flour
1/2 cup of rolled oats
1/4 cup of ground flaxseed
1 cup of unsweetened applesauce
1 egg
2 scoops of vanilla protein powder
1/2 tsp of salt
1/2 tsp of vanilla
1/2 tsp of baking soda
1/4 cup of melted butter (I use Smart Balance Butter Blends)
1 1/2 tsp of cinnamon

Mix together ingredients and spoon into a lightly sprayed loaf pan.  Bake @ 375 for 45 minutes or until lightly browned around the edges.

This makes an extremely filling and lightly sweetened banana bread.  If you’d like to make it a bit sweeter (my taste buds might be blander than yours), feel free to add 1/4 cup of brown sugar or 1/4 cup of Splenda.  You could also add walnuts to it if you had them and folks in your house enjoyed them.  This recipe is extremely good for you and tasty, too!

    Yeah, walnuts would add more omega 3s (in addition to the flaxseed).

    Could also probably use a 1/4 cup of honey to sweeten (I assume honey is healthy?).

    We might actually have all these ingredients… I might try this. 🙂

    Walnuts would add a kapow to the taste too. 🙂 I just didn’t have any around the house. I’d say maybe 1/2 cup, depending how nutty you are.

    Honey would also work great. Tip on measuring honey – spray your measuring cup before filling with honey with non-stick spray and it slides out easier and you’re not scraping it out as much. It is pretty healthy but don’t feed it to infants under the age of 1.

    I pretty much tossed a little of whatever I had laying around which is what I love about making banana bread weekly.

    Non-walnut kind would be great with some peanut butter spread on it, too.
