I was so excited to get my favorite magazine, All You in the mail last week for the first time. I’ve faithfully been buying it for months in store at Walmart but broke down and bought my own subscription through Lady Ann-Maire a couple of months ago. You can get it for only $.75/issue through my blog and this month it has over $73 of coupons in it! It has coupons I really use and is chock-full of articles with money saving, health, nutrition, fashion, home maintenance advice, and more! I don’t read many magazines but I read this one from cover to cover.
One of the great features that All You has is its recipes. Every month, there’s a calendar with a two month meal plan complete with some recipes. Regularly there are also themed meal ideas! In the August edition, there’s entire section devoted to having a “Fabulous Fiesta” for Labor Day (pages 90-98). I thought that I’d share the recipe that leapt out at me from the pages.
I LOVE seafood and especially shrimp. Since I fell in love with shopping at Aldi I discovered that we can eat frugally and still afford to occasionally eat seafood! Yay. This recipe will be easy and affordable for us. You can find it on page 96.
Grilled Shrimp with Lime-Cilantro Dipping Sauce
Shrimp:
– 32 medium to large shrimp (~ 2lbs), peeled and deveined
– 2 T lemon juice
– 1 T grated lemon zest
– 1/4 c olive oil
– 2 cloves garlic, minced
– salt and pepper
Dipping Sauce:
– 1/2 c soy sauce (we use the reduced sodium kind)
– 2 T chopped cilantro
– 2 T lime juice
– 1 T Vegetable Oil
– 1/4 t sugar (or Splenda)
1. Preheat broiler or prepare medium hot charcoal fire.
2. Make sauce. Combine soy sauce, cilantro, lime juice, oil, sugar, and 1 T water in a small bowl. Mix well until sugar is dissolved. Refrigerate until ready to serve. Sauce can be prepared up to 2 days in advance and stored, covered, in the refrigerator.
3. Make shrimp. Rinse shrimp under cold running water, drain and pat dry. Place them in a large bowl and add lemon juice and zest, oil, garlic, salt and pepper. Mix well to coat. Thread shrimp flat (through tail and head) dividing evenly among 8 long metal skewers. Cook shrimp about 6 inches from heat until bright pink and firm, about 3 minutes per side. Remove shrimp from skewers to a serving platter and serve warm with sauce on the side.
