Good morning Lords and Ladies!  Apparently I’m craving Mexican food this week because almost all of the recipes have a southwestern flair.  I think it’s just that I have a bag of black beans that need cooked up and we LOVE eating them.  Plus I also LOVE southwestern foods in the fall.  You’ll also notice lots of soups and crock pot recipes creeping back into the menu plan as the fall weather comes our direction and Colts Football season begins.  We have soup almost every Sunday throughout the entire fall.

Monday: Taco Bowls
                Ground Turkey, Black Beans, Brown Rice, Mexican Cheese,
                Spinach, Salsa, Avocado, Light Sour Cream
                Apple Sauce
                Peach Crumble later that night for dessert

Tuesday: Pumpkin Waffles
                Eggs
                Bacon
                Fruit Salad

Wednesday:  Tortilla Crusted Chicken
                      Black Beans and Rice with Salsa
                      Fruit Smoothies (Strawberry, Blueberry, Banana)

Thursday: Homemade Pizza with lots of Veggies
                 Spinach Salad

Friday: Mesquite Grilled Chicken
            Spinach Salad
            Southwestern Sweet Potato and Corn Medley
           with a few minor adaptations, frozen corn instead of canned,
           red onion, and dried basil

Saturday/Sunday: Black Bean Southwestern Chili
                             Fresh Cut Veggies
                             Subway $5 Footlong
                            *I have a Gift Card from My Coke Rewards 
                             that hopefully will arrive before Sunday

Hopefully our menu plan will spark some ideas for your own plan.  One of the very best ways to save money and eat more healthfully is to have a specific plan when it comes to your meals.  Change your world (and your waistline) one penny at a time!
