Save Money & Slay Debt

*Monday* Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

April 27, 2010 By Cherie Lowe

Obviously, I’m a day late (just not a dollar short) this week.  🙂  Just in case you wondered, we did eat at home last night.  The King of Free has not yet broken his “No Eating at a Restaurant in 2010” streak.  Seriously, the boy has gone almost four months.  That is just darn impressive.  I can’t say the same for myself.  But it’s been greatly reduced and usually someone else is paying (Thanks Mom!  Thanks Dad!). Now, we didn’t eat out much to begin with but our budget is ridiculously reduced from last year.  Woohoo!

Anyway, here’s what we’re having on the Royal Table this week.  Don’t forget you can use this tool to help you plan your meals, too!

Monday: Ground Turkey Nachos (just in case you wondered what we ate!)
on Blue Corn Chips with 2% Cheese, Onion, Salsa
                Apple Sauce

Tuesday: Egg White Sandwiches on Whole Wheat Toast
Topped with fresh Veggies (I’ve been inspired by Subway!)
                Fruit Smoothies

Wednesday:  Grilled Chicken Salad
on Spinach Bed with Red/Yellow Peppers, Cucumber, Carrots, Red Onions,
Mushrooms, Boiled Egg, Avocado, an Cheese
                       Toast/Olive Oil

Thursday: Veggie Pizza
                   Fresh Cut Veggies
                   Apple and Orange Slices

Friday: Tortilla Crusted Flounder
             Black Beans
             Brown Rice
             Salad

Saturday: Leftovers

Sunday: Lunch and Dinner: Pork Tenderloin Sliders (we didn’t get to this meal last week!)
                                              Cole Slaw
                                              Black Beans
                                              Corn on the Cob
                                              Apple Sauce

What are you most looking forward to putting on your Royal Table this week?  Don’t forget you can use this handy dandy tool to plan your meals and keep a good grocery list on hand, courtesy of the Queen of Free.
