Monday Meals

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

September 14, 2010 By Cherie Lowe

Here’s what’s for dinner on the Royal Table this week.  And yes, I know that this is really more of Tuesday Meals than Monday Meals.  🙂  You’ll notice a lot of apples since we made a trip to the Orchard this week.

Monday: Honey Lime Grilled Chicken Sandwiches
on Whole Wheat Bread, Spinach, and Chipotle
               Fresh Cut Veggies
Apple Slices (Honey Crisp from the Orchard, yum!)

Tuesday: Whole Wheat Pasta with Grilled Chicken
tossed with Olive Oil, Fresh Tomatoes, Spinach, Garlic, and Mushroom
topped with Mozzarella and Parmesan Cheese and baked
                Fresh Baked Whole Wheat Bread
                Crock Pot Apple Butter

Wednesday: Bacon, Spinach, and Tomato Sandwiches
                    on Whole Wheat Bread
                    Fruit Smoothies

Thursday: Pizza Soup
                 Fresh Baked Whole Wheat Bread

Friday: Turkey Pepperoni Pizza
             Salad
             Baked Apple Crumble

Saturday: Lunch: Leftovers
                Dinner: Grilled Hot Dogs
                             Black Beans
                             Sweet Potato Fries
                             S’mores on the Grill

Sunday: Southwestern Black Bean Chili
               Corn Cake
               Apples and Peanut butter

If you’re new to planning meals, it really doesn’t take anything more than a pen and paper.  Step into your kitchen.  Open up the cabinets, pantry, fridge, and freezer.  Build your meal plan around what you already have.  Next, build meals where you only need one or two ingredients from the store.  Try to give your family at least one veggie and one fruit in every dinner.  Keep it simple.  And if you need this document to jot down your meal plan and your grocery list, I’ve got your back.

Happy Planning!
