Monday Meals: Black Bean Salsa Soup

I love a recipe that you can literally dump in the crockpot and let cook all day long.  And if you follow Dave Ramsey like we do, you know that beans and rice become almost a spiritual meal when you’re getting out debt.  So here’s a recipe that combines dumping stuff into a crockpot and beans and rice, rice and beans.

Black Bean Salsa Soup

Royal Ingredients:

  • 1 Jar of Salsa {we love any kind of Peach Pineapple and I feel it makes this recipe particularly delicious but go with your favorite brand or the cheapest you can find}
  • 1 can of Black Beans, drained and rinsed
  • 2 c of Frozen Corn {or more if you’d like}
  • 1 c of Brown Rice {not pictured, whoops}
  • 1 Small Onion {chopped}
  • 1/2 a box of Vegetable Broth {or Chicken Broth}
  • 1 T of Brown Sugar
  • 1 t of Freeze Dried Cilantro {more if you’re using fresh}
  • 1 t of Cumin
  • 1 Can of Canned Chicken, Drained {don’t have to use for Vegetarian version}
Empty the salsa into the crockpot.  Fill the jar with water to get remaining salsa from the sides and add it to the crockpot, too.  Add the remaining ingredients and stir.  Cook on high for 3 hours or low for 6 hours or until the rice is tender and the soup is hot {you’ll be able to tell}.
If per se you happen to cook it until it boils or have a high powered crockpot that plans to take over the universe in its spare time, you can add more frozen corn to it cool it off.
Serve topped with shredded cheese, chips or tortillas, sour cream or a drizzle of ranch dressing.  It’s a rather hardy soup that can be eaten on its own or paired with a salad or baked sweet potato.
