The last two weeks have been brutal friends – as if it wasn’t already evidenced by my absence here online. Speaking engagements, birthdays, obligations, and of course edits on the manuscript have had my head swirling. Most days, making dinner is a mindless reprieve. We’re still eating at home. If nothing else, writing a book about living simply and being intentional about your finances will make you dig in your heels and refuse to dine out or waste groceries. I’m doing my best to continue the path we began so long ago when we started paying off $127K in debt. That means careful meal planning, careful grocery shopping, and stretching each penny until it lets out a little yelp. 😉
So it’s time for me to share our plan for meals this week. Nothing fancy or time consuming here. I’m slammed and also trying to make my minutes yelp because they’re being used to their fullest potential and stretched like silly putty, almost to the point of breaking. I did the breaking thing last week and that was not good.
If I don’t have a plan, I know I’ll fail when it comes to best using our resources, money, and time without a meal plan. I don’t always follow our meal plan to a T but there’s a relief in knowing that we have all of the items to make meals all week long that we need. That way, we use the groceries we have and stay out of the drive thru (obviously saving money!). Regular meal planning was one of the many keys to us paying off $127K in 4 years. Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt. Often I swap days or side items to make our menu plan work but the main purpose is to make sure I have everything on hand I need for meals throughout the entire week. The less you go to the store, the more money you save!
