Hooray it’s Monday. We had an insane weekend that made me long for a new week. Ever have a string of days like that? There’s something comforting about the “norm.” So this AM I’ve been clearing through the laundry, dishes, and some food prep. I’ve mentioned before that I use this little handy dandy meal planner {pictured above} to draft our meals via pen and paper on a weekly basis {and also create my grocery list for the next week}. There are many ways you can approach planning yours but the main principle is to find something that works for you, stick with it, and tweak it as life dictates.
Without further ado, here’s what’s on the Royal Table this week:
Monday:
Egg Casserole with Cheese, Spinach, Red Onion, & Baby Portabella Mushrooms
Egg & Cheese only for the Princesses
Roasted Sweet Potatoes
Biscuits
Sliced Strawberries with Blueberries
Tuesday:
Pulled Pork & Black Bean Tacos
Salsa, Cheese, Guacamole, Lettuce
Brown Rice
Apple Slices
Wednesday:
Chicken & Mushroom Pasta with Fresh Garlic & Onion
Salad
Garlic Bread
Apple Crumble
Thursday:
Math Bowl so late dinner out with the Royal Grandparents
Friday:
Homemade Pizza {Thin Crust Recipe}
Topped with Turkey Pepperoni, Red Onion, & Mushroom

Saturday:
Brunch: Cereal, Toast, Fruit, Oatmeal
Dinner: Out YAY {We’ll be at a Conference}

Dinner: PBJ, Veggies, Fresh Fruit
Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt. It’s an easy step to make the most of what you have and keep you out of the drive thru. If craziness ensues {which often it does in the Queendom}, I’m not afraid to swap out a quicker meal on a different deal or even jumble around our side dishes. I just have peace of mind and am prepared to make any of the meals listed before the week begins. And that keeps us from overspending at the grocery store {or restaurant} and making the highest best use of what we have purchased.
