Monday Meal Plan September 24

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

September 24, 2012 By Cherie Lowe

Good afternoon, Money Saving Lords and Ladies.  It is yet again Monday {odd how those sneak up weekly} and I’m sitting at the keys with the windows open, planning our meals for another week.  I printed out 4 of the above pictured meal planners {on recycled paper and with the printer set on draft to save money, of course} and am thinking both short term and long term.

I cannot underscore enough the fact that most of us, if not intentional, will let food spoil in our refrigerator {hello 1/4 of bag of spinach past the expiration date thrown out this morning}.  That’s exactly why meal planning is vital in the life and finances of your family.  Making the best of what you already have helps you realize just how very rich you are.

Without further ado, here’s what’s on the Royal Table this week:

Monday:  Crockpot Lasagna {Leftover from yesterday and it is YUMMY}
                  Spinach Salad
                  Garlic Bread
                  Apple Slices {Anderson Orchard, FTW!}

Tuesday:  Crockpot Honey Mesquite Shredded Chicken {served with BBQ Sauce}
                  Green Beans {LOVE me some Taylor’s Farm Market}
                  Yellow Squash
                  Grapes

Wednesday:  Taco Wednesday {Like Taco Tuesday but with less alliteration}
                       Leftover Chicken
                       Black Beans, Taco Shells, Cheese, and Spinach
                       Homemade Guacamole
                       Brown Rice with fresh Cilantro
                       Homemade Crockpot Apple Sauce

Thursday:  Egg, Canadian Bacon, and Cheese Sandwiches on Whole Wheat
                    Sweet Potato Hashbrowns
                    Apple Sauce

Friday: Homemade Pizza {this crust}
              Spinach Salad
              Persimmon Cookies {yay for pulp from Walker’s Eggs}

Saturday:  Brunch: Crockpot French Toast
                                 Oven Cooked Bacon
                                 Who Are We Kidding?  Leftover Cookies

                   Dinner: Leftovers/PBJ/Veggies/Fruit

Sunday:  Lunch:  Creamy Turkey and Wild Rice Soup
                              Crockpot Banana Bread {Trying for the 1st time, last week didn’t work out with the
                                bananas we had because, um, we ate them all.  nom nom nom.}
                              Fresh Veggies and Fruit

                Dinner:  Leftovers

Planning meals was definitely one of the biggest keys for success in our paying off over $127K in debt.  It’s an easy step to make the most of what you have and keep you out of the drive thru.  If craziness ensues {which often it does in the Queendom}, I’m not afraid to swap out a quicker meal on a different deal or even jumble around our side dishes.  I just have peace of mind and am prepared to make any of the meals listed before the week begins.  And that keeps us from overspending at the grocery store {or restaurant} and making the highest best use of what we have purchased.
