Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

January 23, 2012 By Cherie Lowe

It’s been a quiet Monday here in the Queendom.  I’ve done some cleaning, some laundry, some cooking, some preparing for the week ahead.  We’re continuing to keep our meal plan simple and of course 100% at home as we channel our efforts toward debt freedom {~3.5 miles away now}.

Monday:   Whole Wheat Pancakes
                   Bacon and Eggs
                   Baked Apples

Tuesday:   Hawaiian Bread Sandwich {making 2 and taking one to a friend}
                   Sliced Veggies
                   Pear Slices

Wednesday:  Homemade Pizza
Topped with Turkey Pepperoni, Red Onion, and Baby Portabella
                       Salad
                       Apple Sauce

Thursday:   Whole Wheat Thin Spaghetti
Baby Portabellas with Sun Dried Tomatoes and Peas
                      Whole Wheat Quick Biscuits

Friday:  Black Bean Tacos
               Brown Rice
Spinach, Sauteed Peppers, Cilantro Sour Cream

Saturday:  Brunch:
                   Whole Wheat French Toast
                    Roasted Sweet Potatoes
                    Baked Apples

                   Dinner:
                   Grilled Cheese
                   Soup
                   Carrots and Celery
                   Grapes

Sunday:  Leftovers

While you’re not invited to eat at the Royal Table, you are invited to plan your meals, too {and share your ideas here!}.  It doesn’t have to be complicated.  I print this document each week and keep both our meal plan and our grocery list in the same place.

What’s for dinner on your Royal Table this week?  Planning meals will keep your life simpler, out of the drive way, and your budget in the black.
