Monday Meal Plan

Tips like these helped us pay off $127K in debt. You can read our story in Slaying the Debt Dragon: How One Family Conquered Their Money Monster and Found an Inspired Happily Ever After.

August 15, 2011 By Cherie Lowe

Ahh, the back to school season.  I LOVE it.  Basically, I need the public school system when to go to bed and when to get up in the morning because I am not responsible to do it on my own.  For awhile, half in jest, half on a serious note, a friend of ours was routinely sending a text message telling us it was time for bed.  Guess the King of Free and I still need a dad.  🙂

Anyway, I am more intentional about everything in fall – meal planning, grocery shopping, coupon usage,  goal setting, etc. – and so it excites me to get the Royal Family back on track in several areas.  You might notice in my meal plan that I’m getting plenty of inspiration via my new passion for Pinterest.  Egad, I love that site!

Here’s what we’re having for dinner on the Royal Table this week:

Monday:  Poppyseed Marinaded Grilled Chicken
Smashed Sweet Potatoes (fixed via a recipe I found on Pinterest)
                 Salad
                 Sliced Strawberries

Tuesday:  Pulled Pork Tacos (per the Eldest Princess’ request to celebrate the 1st day of school)
with cheese, homemade salsa, lettuce, low fat sour cream
                 Refried Beans
                 Cilantro Rice
Leftover Cinnamon Rolls (from this cute, cute, cute Pinterest idea)
from our bus stop breakfast for the 1st day of school!

Wednesday: Grilled BBQ Pulled Pork, Colby Jack Cheese, & Apple Sandwiches
                      on 100% Whole Wheat Bread
                      Carrot Sticks
                      Grapes

Thursday: Turkey Pepperoni Pizza on Whole Wheat Crust
with Baby Bella Mushrooms, Red Onion, Fresh Oregano & Basil
                   Salad
                   Apple Sauce

Friday: Spaghetti with Meat Sauce
              Salad
              Baked Apples

Saturday:  Leftovers
                   Dinner: TBD

Sunday:  PBJ, Fresh Fruit, Fresh Veggies at church during a meeting
                Dinner: TBD

Every week, I use this handy tool to chart out our grocery lists and plan our meals.  You could use your iPhone, a notebook, or a scrap piece of paper but this works for us.  🙂

Bring on the fall!
