Oh hai! Remember me? I took an unexpected bloggy-cation last week. I hope you weren’t too worried. Nothing was really wrong, I just needed a bit of a break and to chase the Princesses around for awhile while they enjoyed their summer. Annnnd, we had an appraisal to re-fi our house. Hallelujah, our house is very clean and the house appraised higher than we needed it to for our rate. HOLLA. And I’m pretty sure the Shop Vac and I formed a semi-inappropriate relationship with overuse. But it’s all good.
This week, we’re busy with VBS at our church, the Eldest Princess has a couple orthodontist appointments where her braces will be removed (let the chewy, sticky, and popcorn fun begin!), swim lessons, guitar lessons and more. And then we’ll be doing some traveling over the 4th weekend, too. Whew, summer is certainly in full swing.
Here’s what we’re eating each evening this week to keep us from spending time and money in the drive thru!
Monday: Marinaded Poppy Seed Grilled Chicken
Veggie Kabobs
Green Beans
Grilled Peaches
Tuesday: Homemade Turkey Pepperoni Pizza
with Spinach, Onion, and Mushroom
Salad
Sliced Strawberries
Wednesday: Whole Wheat Pancakes
Center Cut Bacon
Scrambled Eggs
Fresh Fruit
Sweet Potato Hashbrowns
Thursday: Grilled Cheese on Whole Wheat
Fresh Cut Veggies – Carrots, Cucumber, and Red/Yellow Pepper
Watermelon
Friday, Saturday, and Sunday: Leftovers and snacks on the road as we travel.
PBJ, Almonds, Dark Chocolate, Cliff Bars, Granola, Cereal, Oranges
A few years back, we purchased a soft sided cooler for a trip and it has been phenomenal. Since space is limited in our a car, it’s much easier to use than a traditional hard cooler and it can be squeezed into the backseat or the trunk easily. We sometimes purchase bottled water or I’ve even been known to make a gallon of tea and seal it on a road trip. There are plenty of ways to save if you’re intentional.
Don’t forget that you can use this handy tool to plan your meals. I’d encourage you to open all of the doors of your pantry, fridge, cabinets, and freezer to see what meals you can craft simply from what you already have before you do any grocery shopping at all.
