Howdy Lords and Ladies! We had a wonderful Memorial Day weekend. What about you? Ours was filled with a whole lot of yard work, time spent with college friends (yay for crust.), family visits, and more yardwork. Today, I’m getting back into the swing of things and will probably mow again! We have 1.5 acres and it grows really fast. Plus it looks like it will rain the next couple of days so to avoid raking, I have to keep on it. Add that to an orthodontist appointment, plenty of laundry, the usual beginning of the week catch-up, a bike ride on the trainer today (at least it’s pretty enough out to take it out of the garage) and a book study tonight and you’ve got one busy Queen!
I’m not too busy to plan our meals, though! Here’s what we’re having on the Royal Table this week.
Tuesday: Grilled Pork Chops
Prince Edward Mix (Green Beans, Wax Beans, and Carrots)
Grilled Apple Slices
Wednesday: Taco Bowls with Lean Ground Beef
Black Beans (slow cooked in the crockpot)
Brown Rice
Reduced Fat Cheese
Lettuce, Avocado, Salsa, Sour Cream
Thursday: Homemade Turkey Pepperoni Pizza
Carrot and Celery Sticks
Apple Crumble
Friday: Salmon Burgers
on Whole Wheat Buns with Lettuce, Tomato, and Basil Mayo
Parmesan Garlic Potato Wedges
Cole Slaw
Watermelon (or Sliced Strawberries whichever is cheapest this week)
Saturday: Brunch: Turkey Bacon and Eggs
Whole Wheat Toast
Fruit Smoothies
Dinner: Marinaded Grilled Chicken
Served on a bed of Romaine and Spinach
with Carrots, Red/Yellow Peppers, Cucumbers, Tomatoes, Cheese
Grilled Pineapple
Sunday: Lunch: Leftovers
Dinner: Chinese Take-In
Beef Peppercorn with Bok Choy and Carrots
Oriental Veggie Mix
Rice
(I’m guessing the girls will have grilled cheese with veggies)
This week, I’m tracking my grocery list with the free Droid App Our Groceries (LOVE the voice recognition feature when it comes to list making). But when I *sniff* have to return it next week, I’ll be back to using my good ole pencil and paper document.
