Welcome to the first edition of Monday Meals! I’m sharing one of my favorite soup recipes, perfect for the cold weather predicted this week in Indiana. I like to call this recipe a Can-of recipe b/c it’s basically a can of this and a can of that, all dumped into your crock pot.
1 can of black beans, drained and rinsed
1 can of reduced fat and reduced sodium chicken broth
1 to 2 cans of water (or until your crock pot is close to full – you’ll want to leave a little bit of room for the rice, mine is 5 quarts so it takes a bit more)
1 16 oz jar of salsa
1 large can of Chicken (white meat only), drained
1 cup of instant brown rice
Optional: 2 tsp of taco seasoning or cumin.
Basically, dump all of this into your crockpot and slow cook on low for about 4 hours (more or less depending on how your crockpot cooks). We usually use a little more rice because we like our soups stick to your ribs thick. Top with cheese and avocado slices and/or tortilla chips.
I think Monday Meals might be a little harder for me than I realized as I don’t usually use a recipe for most meals that I cook. And/or I alter them and am not sure by exactly how much. This is one of those recipes that you can’t go wrong with though. Have a warm bowl of soup this week on the Queen!
