This recipe is one of the Princess Eldest’s favorites. I have to admit that it gives me a little mom joy when she gets very excited, asking if we can have Turkey Black Bean Chili. Ironically, it’s probably the easiest meal for me to fix and I can throw it all in the crockpot early in the morning to let it simmer all day. Oh, and don’t forget this is a part of the ALDI Meal Plan: 7 Dinners for Less than $50. In fact, if purchased from ALDI, the ingredients add up to be less than $5.
Ingredients:
1/2 package of Ground Turkey from ALDI, browned and drained
1 can of black beans, drained and rinsed
1 can of crushed tomatoes
1/2 can of water
1 T of Chili Powder
Yep, that’s all. If you want to be all fancy, you could certainly add onions when browning the meat. Or you could use stock or broth instead of water. You could add more spices or some garlic. However, it is just as delicious without the bells and whistles.
1. Begin by browning the ground turkey. If you choose to throw in some salt and pepper you can. Or sometimes I use our homemade taco seasoning mixed into the turkey.
2. After you brown the meat, divide it into 2 equal parts. Place half into a freezer bag. You can use this at a later date in another batch of chili or for nachos/tacos or in a spaghetti meat marinara. You will recall your brilliance and quickly fix dinner without any fuss.
3. In your crockpot, place the full can of crushed tomatoes. Run water into the can to pick up what’s stuck to the sides and remaining at the bottom of the can and add that to the pot, too.
4. Drain and rinse a can of black beans. Add this to the tomato base in the crockpot.
5. Add the prepared ground turkey.
6. Add chili powder and any other seasonings. We’re lightweights when it comes to spice so this is a mild chili. You could also add a teaspoon of brown sugar or a piece of dark chocolate for a savory sweet flavor.
7. Mix together and let simmer on high for 2-4 hours or low 4-6 hours.
8. Serve with tortilla chips, sliced avocado, and shredded cheddar cheese. Or on top of pasta if you’re from the midwest. 🙂
