I had a couple of requests to share this recipe after yesterday’s meal plan. This is a fantastic soup, filled with veggies that your kids don’t have to see & might not even guess are in the mix thanks to the powers of your blender. It’s delightful with a good crunchy bread and topped with some mozzarella & parmesan cheeses (this is a brand I’m crushing on right now – although I found it MUCH cheaper at Walmart). To maximize the recipe below (and because we LOVE tortellini), I actually divide it in half & freeze half of it without the tortellini step. After dethawing, I bring it to a boil & then add the tortellini in the last ten minutes. Or you can pour it into the crock pot & cook on low with the tortellini throughout the day. It might be a little soggier, but it will still taste delish.
This recipe is neither of the 5 minute or $5 dollar variety; however, it makes quite a bit of soup which should stretch through several fall days.
Ingredients:
1 lb Turkey Italian Sausage (I removed the casing)
1 Cup Onion, Chopped
2 Garlic Cloves, Chopped
4 c Chicken Broth
1 ½ c water
½ c Red Cooking Wine (Use less wine if the kiddos don’t like the flavor)
3 T Brown Sugar
2 C Cheese Tortellini
1 t Crushed Red Pepper
28 oz Crushed Tomatoes
2 Carrots, Grated
1 t Basil
½ t Oregano
1 1/2 T Tomato Paste
3T Parsley (Fresh Italian Parsley is best, but any will do)
2 c Zucchini, Grated
1 Medium Bell Pepper, Chopped
1. Brown the sausage with the onion and garlic and let it cool. Add to a large stock pot.
2. To make the soup thicker, and the veggies less distinguishable for pickier eaters, blend them up. Apologies for the teeny & blurry picture.
3. Make sure you know how to work your blender. Or you might end up with something that looks a little like this. This picture is from when I made the soup a couple of years ago. I am happy to announce that I can now operate the blender without incident. Also? This was AFTER I cleaned things up. Ay yi yi.
5. 15 minutes before you’re ready to serve it, add the Tortellini. It will cook throughly without getting soggy.
If you reheat this as a leftover dish, you may need to add some water to it because it’s so hearty & it will “grow” overnight. Again, I cannot stress strongly enough that you should practice save blending.
This is a perfect dish for holiday gatherings or fall afternoons, guaranteed to keep you warm and cozy. Enjoy!
